yum, what's on them? it looks like maybe olives and tomatoes on the left side, and cheese? right side i can't really tell at all -- almost looks like shredded carrots and thinly sliced pickles?

You guessed right, almost perfectly (the things that look like pickles are just ordinary zucchini)!
